As the name suggests Fusion Bay is a haven for fusion cuisines in Fort Kochi located at K.B. Jacob Road near the Basilica Junction. One of the best restaurants in town, this place is open from 12 – 3 pm in the afternoon and 6:30-10:30 pm during the evening every day. Fish Pappas, Dutch Style Fish, Squid Batter Fried, Chuttulli Meen are the main dishes here to name a few.
The success of Fusion Bay lies in its attempt to find new ways of combining foreign cuisines with the local recipes to create tasty dishes. The menu here offers a fusion of traditional Kerala style preparation with Continental cuisines that made this restaurant stand out from the other hotels.
You can find this restaurant on the left side of K.B. Jacob Road just after the Santa Cruz Basilica Junction while travelling towards Jawahar Park. Oceanus Restaurant near Bitto School in Elphinstone Road is a sister concern of Fusion Bay. Though there is not much space available for keeping your vehicles in front of the restaurant but finding a parking area nearby won’t be a problem.
Foreigners visiting the city are the main patrons of this restaurant. ‘Dutch Style Fish in Banana Leaves’ is a popular item from their fusion menu. Fish marinated with ginger, garlic and coconut milk is wrapped with banana leaf and roasted over a tawa(frying pan) to prepare this dish. ‘Fish Pappas’-a Kerala meal combo also has a huge demand among the foreign nationals. Spicy fish curry with its rich gravy is served along with Kerala meals.
‘Chuttulli Meen’ is a dish prepared in Kerala style in which a mixture of garlic, shallots, gingers, lemon juice and coconut milk is stuffed inside the fish. It is then roasted after wrapping with banana leaves. This recipe tastes best when prepared with Seer fish. ‘Squid Batter Fries’ is a great starter item to try from this place. The squid is first dipped in an egg solution followed by coating it with batter. It is then deep fried in oil before serving hot with sauce.
The calm ambience of Fusion Bay is more like a home than that of a restaurant. The interior décor comprises potted plants and soft lighting from the chandelier. This restaurant experiences heavy rush during peak tourist season and has a fast service to meet the customer’s requirements. But lack of professionalism is quite evident in the service but this is compensated by their tasty dishes.
